Introducing one of our family favorites: the Betutu Chicken Hybrid. This name is familiar to your ears because this Balinese food is popular all over the islands and even abroad. Europeans call it: Balinese chicken. The combination of all the spices and the smell of banana leaves hhhhhm made this dish special. Items:
- 1 whole chicken without giblets (approx. 1.5 kg), wash well
- 250 grams of cassava (replace with kale leaves or mustard greens if not available)
- 3 lime leaves, finely chopped

Vegetables:
- 7 large red chilies, seeded
- 10 grains of red onion
- 4 garlic cloves
- 5 hazelnuts
- 1 teaspoon baking powder (if you like)
- 2 cm of ginger
- 2 cm of kencur
- 2 cm of galangal
- 2 cm of turmeric or 2 teaspoons of turmeric powder
- 2 teaspoons coriander or 1 teaspoon coriander powder
- 1/2 teaspoon ground pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground nutmeg
- 2 cm cinnamon or 1/2 teaspoon powder
- 3 tbsp tamarind water (1 tsp pureed tamarind in 3 tbsp water)
- 5 cm lemongrass, white part, finely chopped
- 2 teaspoons of salt or to taste

How to do it:
Cut the chicken lengthwise across the breast. Dry with absorbent paper. put aside.
Wash cassava leaves, dry, eat for a while. Puree the ingredients thoroughly in a blender or food processor. Add a little oil to the blender if necessary. Saute the spices until cooked and fragrant. influence. Add salt and sugar to taste. cold. For the ground spices in 2 parts.
Mix the 1/2 part with the cooked cassava leaves/top mustard until combined. Coat the chicken with the remaining spices until well coated, then add the cooked leaves to the inside of the chicken.
